I drink miso soup every day. I made Miso at home on Sunday.
Our meals are mostly Japanese. We often use miso. I always buy it at Asian shops, but you can also make it yourself. I made it for the first time. The ingredients are soya beans, salt and koji. First, you mash the beans. Then mix the mashed beans with salt and koji. Squash them well. That's it. It is easy and fun. You can't eat it straight away - we wait four months.
When my family in Japan came to the UK, they brought me a homemade miso kit. I have wanted to try it for a long time. It is more convenient for beginners if the ingredients are in a set, but the only ingredient that is hard to find in the UK is koji. However, you can buy koji online and the rest of the ingredients are sold in regular shops. At the end, you also add a little shochu to preserve it, but we didn't have it so I used vodka. If my first miso goes well, next time I want to buy the ingredients to make it myself.
